Made these fairy cakes on a grey, chilly Sunday afternoon. Good for lunchboxes the next day too.
I omitted the lemon flavourings from this recipe and instead used 1 tablespoon coffee granules dissolved in about the same amount of hot water, and also added 2oz of chopped walnuts.
When cooked and cooled, I covered with a simple coffee icing: mix together icing sugar and some dissolved coffee granules.

Just found this pic from when I made these during early 'lockdown', 6 April 2020, probably with my kids when we were all going a little stir-crazy. Obviously felt fancy, arranging them in our cake stand:
