I was looking to make something quick and generously-sized to take over to the usual Saturday afternoon meet-up at my MIL's house. This seemed to fit the bill, especially as it was so close to Xmas. A great recipe, amongst so many others from 'IrishMammyCooks' on all the social media platforms, here on FB and Instagram.
INGREDIENTS
Fits a 16x26cm tray - or a deep 8 inch square tray [I used my deep square tin]
- 200 gms self raising flour
- 150 gms caster or icing sugar [think this could be reduced to 100g, it was very sweet!]
- 1 tsp pumpkin spice - [I used mixed spice]
- 150 gms very soft butter
- 3 eggs
- 250 gms mincemeat - the sweet kind!
- [I also added handful of desiccated coconut; and also 2 tablespoons of Havana Club rum!]
METHOD
Preheat the oven to 160°C fan. Add all the ingredients to your bowl and mix. This will be quite a sloppy mix [wasn't for me actually]. Pour into your parchment-lined tray and bake for 30-35 minutes.
Each of these 9 pieces was humongous - next time I'd cut into 16 pieces!
