Fairy Cakes with a little jam surprise in the middle.
Make fairy cakes as usual but after putting one spoon of cake mixture in the cases, put a heaped teaspoon of jam, followed by another spoonful of cake mixture.
Basically followed Delia Smith's butterfly cake recipe but without doing the lemon curd or butterfly thing:
