Leek & Potato Soup

 

A lovely soup which I adapted from this recipe:

My adaptations:

1. I only had 2 leeks, and didn't have any rocket to use.

2. I added a big handful of frozen peas (for a protein & colour) and 4 cloves of pureed garlic later in the sweating stage.

3. I served the soup generously sprinkled with grated Parmesan (protein!), and some homemade croutons (see below)

 

Any soup with potato is a bit of a faff because of having to press the soup through a small domestic sieve, rather than the usual blending, and you get a smaller yield of liquid soup. Still it tasted fab, if I do say so myself! 

(I had a thought about the 'squeezed veg mush' left over in the sieve - what if you made little patty shapes, bread crumbed and sauteed them? So I've frozen this left over mixture and will give it a try).

My homemade croutons:

1. I cubed up 3 slices of bread (I used our wholemeal seeded bread).

2. I tossed them into a large (non stick) frying pan with a tablespoon of olive oil already heated up. 

3. Sprinkled over some garlic powder, dried mixed herbs, salt and pepper.

4. Gently stir/toss tying to coat all sides of the cubes with the flavourings and oil.
