Apple Cake


I've made this recipe before and it turned out brilliantly. For some reason, this time it overcooked and therefore had some burnty bits round the edge (which I trimmed) and for some tastes it was a bit dry, though I liked the flavour. Also this time it seemed a very high ratio of apples to cakes mixture so I didn't add them all - my mistake I think - next time I might increase the cake mixture by a third too. However we still enjoyed it but it didn't have that wow factor as before. [Thankfully, a more successful attempt a couple of years later!]



I didn't have any flaked almonds so I made my own. Soaked some whole almonds in hot water for the half an hour I had. Skinned them (yes, fiddly), then sliced them.
