Red Berry Sponge Cake


I fancied cake - but without the sweet, sugary fillings and toppings, maybe even with some beneficial fruit. So I made up this concoction, and it turned out ok, very good even!

INGREDIENTS:

3 eggs (200g)

200g Self-raising Flour

150g Caster Sugar (I reduced it from the standard 200g)

200g Butter, softened

Few spoonfuls of Desiccated Coconut

Teaspoon of vanilla essence 

1 Tblspn Milk, or other liquid (I used a gifted Peanut Butter Whisky, but couldn't really taste it)

300g Frozen mixed berries (chop down any bigger berries)

optional: almond flakes

METHOD:

1. Mix together all the ingredients (except the berries & almonds)

2. I plopped in two thirds of the mixture into a greased, lined 22cm square cake tin.

3. Sprinkle over the berries.

4. Spread over the remaining mixture; smooth it out, all the way into the corners (I had quite low height in the corners of my finished baked cake so important to do this, as I hadn't. Or maybe use a slightly smaller tin.)

5. Sprinkle over the flaked almonds, if using.

6. Put in oven at 160c fan for 50 mins or so. Cool in tin for 10 minutes or so, then transfer to rack, sprinkle with icing sugar.

Nice on its own, or with custard/cream.
