Breaded Vegetables Patties

After making some Leek & Potato soup recently, and laboriously having to press it through a sieve (as you must with a potato soup), I was left with a quantity of quite a flavourful 'veg mush' of the leeks, potatoes, garlic cooked in butter and simmered in veg stock. 

Feeling adventurous and having some time/energy, I thought I'd try an idea - this is what happened...

INGREDIENTS:

• Cooked, roughly mashed vegetables (in this case, leeks, potatoes, garlic) [Some grated cheese might be a tasty addition to the mixture?]

Breadcrumbs, fresh or bought

• Oil/fat to shallow fry


METHOD:

• Take spoonfuls of the mixture, shape them into a patty and turn them over in a plate of seasoned breadcrumbs (I simply grated up some brown bread, added seasoning).


• Saute/shallow fry in a frying pan, gently turning them over to lightly brown.

 

I served them as a snack with some sweet & sour chili sauce.

It's a good use of the left-over soup ingredients. The mixture, and resulting patties were slightly floppy but very tasty! Have to think of how to firm them up next time.
