Baked Smoked Haddock, Butter Beans & Vegetables

 

What do you do when you've been working all day, haven't planned dinner and haven't got a 'main meal-ish' thing in the fridge? You turn to the freezer and store cupboard. (Admittedly, I did have lots of fresh veg in!)

INGREDIENTS:

Pack of frozen Smoked Haddock fillets (or any other fish, come to it!)
Tin of Butter Beans
Chopped pepper
2 quartered tomatoes
Handful frozen green beans
Few sliced mushrooms
Chopped black olives (from jar)
Chopped Sun-dried Tomatoes from jar
Dried Mixed Herbs, garlic powder, Salt & Pepper

Later topping: grated cheese

METHOD:

• Cover the bottom of your chosen oven dish with frozen smoked haddock (or any other fish, come to it!)

• Dump in the other ingredients (except the cheese).

• Place oven dish in oven (I used the matching ceramic cover because it was there!) at about 190c fan for 40 mins or so. 


• I squeezed in some lemon juice.The frozen fish will probably have released some hot juicy water, so I then mixed in some cornstarch (about a teaspoon, made up to a paste with cold water). I sprinkled over the grated cheese and put it back in the oven for 5-10 mins or so, or until you're happy with the fish & veg being cooked.

I served it with a tray of baked cubed up potatoes, sweet potatoes and cauliflower, on another shelf in the oven. It all turned out very well - and high in vegetables, low in fat and with a decent amount protein.
