Pan-fried Spicy Salmon on soy Noodles


 
A quick and easy 2-pan meal on the hob:
 
1. Sauté some chopped ginger & chillies and diced pepper in a wide frying pan. 
 
2. Few minutes later add the salmon fillets (skin-side up) to the frying pan; after few mins turn them over and crisp the skin (pile the veggie bits on top if burning). Sprinkle the salmon tops with some soy sauce to flavour. 
 
3. Meanwhile in a large pan of water, start boiling some frozen peas & sweet corn; when boiling, add the noodles and cook for 4 more mins.
 
4. When noodles cooked, drain and toss in soy sauce and leave covered in saucepan while salmon finishes. 


5. Serve the salmon (crisp skin-side up) on a swirl of noodles with the veggie bits scattered on top. Garnish with chopped spring onions. 
 
In place of the salmon, you could try any fish, even prawns (hmmm, that would nice!) or even perhaps thin/beaten chicken breasts.
