Pan-fried Salmon with Potatoes & Veg

 


A quickly-got-together store cupboard/frozen meal when needed.  

We had just got back from a sunny day out during this pandemic year when the lockdown restrictions had been eased somewhat and I needed to get a quick, light meal on the table for the family.

1. Pan-fry fresh or frozen (run under hot water for few seconds) salmon fillets, in a large frying pan, in butter, lemon juice and any other flavourings you like (e.g. splash of soy sauce, sweet chilli sauce, any fresh or dried herbs)

2. Meanwhile saute some tinned potatoes and any fresh or frozen veg, sprinkling on seasonings. I happened to have fresh mange tout, courgettes and cherry tomatoes. Keep the veg going on the heat until the salmon is done.

Serve together!
