Chili Mint Spicy Turkey Burgers


Ingredients:
- 500g Turkey thigh mince
- 1 onions, 2 spring onions, thumb of ginger, 2 garlic cloves, some fresh mint , four hot fresh chillies
- tblspn garam masala, tblspn ground coriander, dash of paprika, salt and pepper (whatever you want really!)

1. I blitzed together everything but the mince and then 'forked' the spicy green mixture into the turkey mince, mashing it all together.


2. I made eight burger patties and put them in the fridge to firm until needed.

3. I cooked the burgers in a non-stick frying pan with a minimum of rapeseed oil.

4. Meanwhile I had roughly chopped up half a cauliflower until it resembled 'rice' (surprisingly easy to do, it just crumbles). Then put it in a lidded non-stick frying pan with a few tablespoons of water to gently steam for 7ish minutes. Add salt and pepper. Take lid off at the end if you need to evaporate any remaining water.

5. I put some basmati rice on, with frozen peas, cumin seeds and turmeric added, and prepared some salad.  You could leave out the rice for a carb-free meal and make extra 'cauliflower rice'.

Served sprinkled with fresh mint and coriander.

Makes a healthy, colourful and spicy meal, most of which could be prepped-ahead!
