Fresh Coconut and Mascarpone Cake

 

A glut of coconuts bought from a local market led to coming up with this delicious cake.

It's basically an all-in-one Victoria sponge with fresh coconut added, and sliced to give four layers.

But here's Delia's recipe for it (from How To Cook, Book One, 1998) which also describes how to deal with the challenge of dealing with the hard coconuts. My hands were raw at the end of dealing with them, but it was worth it!
