Banana Cake (sugarless & fatless - it's true!)


I couldn't resist trying this. It would surely be a dream to have a good sugar and fat free cake recipe, right? (and co-incidentally on a site called 'linguistics and cake', two of my favourite things...)

Did it work? Well, yes, in the sense that it turned out as it was supposed to - good banana-ey and citrusy flavours with a good rise.

However, in all honesty, it wasn’t the same as a standard banana cake recipe ( I always use Delia’s). Something about the texture and lack of cake crumb and sweetness.

However, my keen-on-health&fitness son liked it and even asked if I'd make it again. A silver lining I suppose. And you could always serve it with a chocolate spread for those needing sugar. (sorry forgot to take photos before we'd nearly eaten it!)

Here's the recipe:

Ingredients:

2 cups plain flour
1 tsp cinnamon
1 1/2 tsp baking powder

1 cup raisins

Zest of 1 lemon

1 cup mashed ripe bananas (about 3)

3/4 cup orange juice

2 eggs, beaten


– Preheat oven to 175c and grease and line a loaf tin or 9 inch round tin.


– Mix flour, baking powder, cinnamon, raisins and lemon zest.


– In another bowl, beat the eggs, orange juice and bananas together.


– Add the dry ingredients to this and mix until just combined.


– Transfer to tin and bake for approx. 40 mins.
