Sticky Chicken Drumsticks





Ingredients:
Few chicken drumsticks (about 8 for 4 people)

Basic coating:
Soy sauce
Honey
Tomato sauce
English mustard
Dried herbs, dried chill flakes

Additional coating ingredients if you want to get more fancy/have more time:
Couple of minced garlic cloves
Chopped ginger
Couple of fresh sliced chili
Sliced spring onions
Sesame seeds


1.  Mix together all the coating ingredients in a bowl. 
2.  Pour this mixture over the chicken and coat thoroughly. (I left the chicken skin on)
3.  Tip the chicken into a shallow roasting tray lined with non-stick baking paper. and cook for 35 mins or so until the chicken is tender and glistening with the marinade. (I didn't turn them over, were fine). If using, sprinkle sesame seeds on 5 mins or so before taking out of oven.

To make ahead: when chicken drumsticks coated tip them into a large food bag, seal and marinate in the refrigerator until needed.

Good served with potato wedges, coleslaw and salad.
