Fish Pie

INGREDIENTS:
Any mixture of fish pieces - about 600g (I used some white fish, salmon and haddock)
Potatoes

For the Sauce:
Milk
Plain Flour
butter
mustard (optional)
Spinach - fresh of frozen (optional)
Grated cheese (optional)

1. Peel and chop potatoes and put on to boil.
2. Put the fish pieces in an oven proof dish and cover with milk

3. Put into the oven for 20-25 mins or so at 180c (I can't remember if I covered with foil!); when done, pour away the milk and let the fish sit until sauce is ready.

4. Meanwhile make the white sauce using any recipe; I use this Delia recipe:

5. If you need to top up with liquid, use some of the milky cooking liquor from the fish, when it is done.

6. When the sauce is cooked, add couple of spoons of mustard, the cheese and the spinach. Do not let the sauce boil after this point, just let it gently simmer till you need it.

7. Mash the potatoes
8. Pour the sauce over the fish, top with mashed potato, decorate if you're feeling fancy, and put in oven for 10 mins or so, to brown.
