Vegetable Topping, Bed or Side dish or for Pasta



Basic method:

1. Begin sautéing sliced mushrooms and any other quick cook veg e.g. courgettes, diced peppers, cooked or tinned potatoes, cooked brown lentils (in a non-stick pan is best)

2. Add some diced fresh tomatoes, 4-ish

3. Add some tomato purée, mixed herbs, etc.

4. Add splash of water or stock if needed


Use as side dish, stir into cooked pasta or top with fillets of white fish
