Spicy Indian Chicken 'Stir-Fry' with Peppers


A quick, easy tasty way with with chicken breasts.

1. Take a large non-stick frying pan and heat a splash of oil
2. Saute some chopped garlic, ginger and chili for couple of minutes
3. Add some diced chicken (about 450g for 4 people), onions quarters, a diced up tomato or two
4. Sprinkle on some garam masala, coriander, cumin seeds plus salt and pepper.
5. Keep stirring, add a splash of water or lemon juice if sticking
6. When chicken almost done, add some chopped peppers and stir for few more minutes until the chicken is cooked through.

I served with some basmati rice, cooked in some turmeric and cumin seeds, topped with flaked/chopped cashew nuts.

Ideally, it would be nice to have this with a 'saucey' dish too, so would be good when there's some leftover daal (Indian lentils)
