Ingredients:
2 Onions, garlic, chicken pieces, tomatoes, ground coriander, paprika, few potatoes, stock.
Optional: peppers, black olives, fresh coriander
1. Sauté 2 medium onions and few garlic cloves in a deep non-stick frying pan or pot for few mins.
2. Dust 7-8 skinned chicken thighs (or other type of chicken) in flour then put in with onions to brown on each side.
3. Put in 4 diced juicy tomatoes ( or half-ish tin of tomatoes)
4. Add salt, pepper, 2 tspns ground coriander and paprika. Pinch chilli powder.
4. Add 4 small diced potatoes (& small amount of any other veg e.g. sliced carrots)
5. Add stock to just cover, maybe half pint.
6. Put lid on and simmer until potatoes cooked & chicken done - about 15 minutes. If sauce is too thin, add tablespoon cornflour.
7. Add sliced peppers and black olives (and any other quick-cook veg e.g. courgette, broccoli) and simmer few mins. Another idea is to add a mashed anchovy! (see if they notice...)
8. Serve garnished with chopped coriander 👨🍳 perhaps with some buttered French bread slices.
