Handy option for a brunch, a quick dinner, for using up eggs or when there's not much else in for a meal. I used 8 eggs in my large non-stick frying pan, that's 2 each for a family of 4.
1. Sauté onions, diced peppers, peas with cumin seeds and mixed herbs in non-stick frying pan.
2. To the pan, add whisked eggs with some chopped ham included.
3. Sprinkle over some grated cheese and herbs, black pepper and chili flakes.
4. When bottom half looks done, flash under medium grill to cook and puff the top
(warning: leave sticking out/protect any non-ovenproof bits of the pan e.g. the handle!)

5. Cut into wedges and serve with fries and salad.
