Chicken in BBQ Reggae Sauce on bed of veg



- Started off roasting some potato chunks in the non-stick casserole dish
- after 5-10 mins added chunked carrots, peppers, sliced onions
- sprinkled over some paprika, coriander, salt, pepper
- covered with 8-ish de-skinned chicken thighs/drumsticks
- drenched over bottle of Reggae, Reggae Sauce
- Popped in oven till chicken done; about 40-45 mins
- served with some fresh spinach leaves and crunchy coleslaw

- if you need to (eg. to pick up from train station!), this can be left on a low heat for a while, with the top on if it's catching.
