Sausage Biryani

  
1) Fry 8-ish Sausages

2) Boil Basmati rice, with cumin seeds, turmeric and few frozen peas

3) Meanwhile fry up in a big non-stick pan, in this order, at 2-3 minutes intervals:
- 2 small onions, 3 garlic, slivers of ginger for few minutes
- add 2 chopped tomatoes
- add spices: garam masala, coriander, ground cumin, salt, pepper, with a little water to prevent sticking
- add thinly 2 chopped carrots, 1 pepper, few mushrooms, tin sweetcorn and whatever else you want
- keep stirring/turning over gently; squeeze in some lemon juice

4) Slice the sausages into small bite-sizes then add to the veg, and gently turn over

Just before the rice is added

5) Add the cooked rice and turn over, breaking up any clumps of rice

6) Sprinkle with coriander (if you have any) and serve with salad and plain yogurt to drizzle over.
