Diwali Carrot Burfi (sweetmeat)

So for the Indian Festival of Diwali celebrated by Hindus, Sikhs and others, I made this sweet dish inspired by the recipe here . The amounts of butter and sugar are not too per bad piece and, well, it's mainly carrots so kind of healthy really! INGREDIENTS: - 2 tablespoon ghee (clarified butter) [I used standard butter ] - 550 grams carrots about 4 cups grated carrots - 1 cup milk powder or 100 to 105 grams milk powder [I use brand Nido, in many UK supermarkets] - ⅓ cup sugar or 65 to 70 grams sugar or add as required [I used caster sugar] - ½ teaspoon cardamom powder [I ground down whole cardamon seeds] - optional for sprinkling on top: chopped nuts, pistachios, silver leaf, or dried fruit -½ teaspoon ghee/butter for greasing pan or tray or plate METHOD: 1. Rinse, peel and then grate 550 grams carrots . 2. Grease a pan or tray with 1/2 to 1 tsp ghee/butter and keep aside. 3. ‘Taste of Xmas’ Cake (Mincemeat Traybake Sponge)

I was looking to make something quick and generously-sized to take over to the usual Saturday afternoon meet-up at my MIL's house . This seemed to fit the bill, especially as it was so close to Xmas. A great recipe, amongst so many others from 'IrishMammyCooks' on all the social media platforms, here on FB and Instagram . INGREDIENTS Fits a 16x26cm tray - or a deep 8 inch square tray [I used my deep square tin] 200 gms self raising flour 150 gms caster or icing sugar [think this could be reduced to 100g, it was very sweet!] 1 tsp pumpkin spice - [I used mixed spice] 150 gms very soft butter 3 eggs 250 gms mincemeat - the sweet kind! [I also added handful of desiccated coconut; and also 2 tablespoons of Havana Club rum!] METHOD Preheat the oven to 160°C fan. Add all the ingredients to your bowl and mix. Leek & Potato Soup

A lovely soup which I adapted from this recipe: My adaptations: 1. I only had 2 leeks, and didn't have any rocket to use. 2. I added a big handful of frozen peas (for a protein & colour) and 4 cloves of pureed garlic later in the sweating stage. 3. I served the soup generously sprinkled with grated Parmesan (protein!), and some homemade croutons (see below) Any soup with potato is a bit of a faff because of having to press the soup through a small domestic sieve, rather than the usual blending, and you get a smaller yield of liquid soup. Still it tasted fab, if I do say so myself! (I had a thought about the 'squeezed veg mush' left over in the sieve - what if you made little patty shapes, bread crumbed and sauteed them? So I've frozen this left over mixture and will give it a try*). [*Surprising myself, I did actually try this idea of Vegetable Patties - very tasty.] My homemade croutons: 1.
